Recipe: Rich Mushrooms

Rich Mushrooms

We made these mushrooms over lockdown when field mushrooms were plentiful - any mushrooms will do though! They are delicious and perfect served hot on crunchy bread with chopped parsley. Makes enough for 2. 

⁣⁣⁣Ingredients:
⁣⁣• Mushrooms - whole or sliced⁣
• 4 tbsp butter
⁣⁣• 1 onion - thinly sliced ⁣⁣
• 3 cloves garlic - chopped
⁣⁣• 1/3 cup cream
⁣⁣• 1 tbsp balsamic vinegar ⁣⁣
• 1 tsp dijon mustard ⁣⁣
• 1 tsp onion jam (or such - store bought is fine or leave out)
⁣⁣• Salt & pepper to season⁣⁣⁣⁣

Method: ⁣⁣
1. In a frying pan add 1/2 butter and fry off onions until brown ⁣⁣
2. Add garlic and cook for another couple of mins ⁣⁣
3. Making sure pan is nice and hot add the rest of the butter and mushrooms ⁣⁣
4. Stir until well cooked * You may need more butter if it all gets soaked up by mushrooms
⁣⁣5. Add balsamic, cream, mustard and onion jam ⁣⁣
6. Reduce heat until right consistency ⁣⁣
7. Feel free time add more cream if you like it creamier!
⁣⁣8. Season with salt and pepper ⁣⁣⁣
9. Enjoy! ⁣⁣⁣
