Rich Mushrooms
We made these mushrooms over lockdown when field mushrooms were plentiful - any mushrooms will do though! They are delicious and perfect served hot on crunchy bread with chopped parsley. Makes enough for 2.
Ingredients:
• Mushrooms - whole or sliced
• 4 tbsp butter
• 1 onion - thinly sliced
• 3 cloves garlic - chopped
• 1/3 cup cream
• 1 tbsp balsamic vinegar
• 1 tsp dijon mustard
• 1 tsp onion jam (or such - store bought is fine or leave out)
• Salt & pepper to season
Method:
1. In a frying pan add 1/2 butter and fry off onions until brown
2. Add garlic and cook for another couple of mins
3. Making sure pan is nice and hot add the rest of the butter and mushrooms
4. Stir until well cooked * You may need more butter if it all gets soaked up by mushrooms
5. Add balsamic, cream, mustard and onion jam
6. Reduce heat until right consistency
7. Feel free time add more cream if you like it creamier!
8. Season with salt and pepper
9. Enjoy!
