The Multi Purpose 'It' Vegetable
Cauliflower has really made a name for itself in the vegetable world and for good reason! It is extremely versatile and is a nutritional powerhouse - packed full of various vitamins, phytochemicals and antioxidants.
Cauliflower is a non-starchy and complex carbohydrate, is high in fibre and has low amounts of naturally occurring sugar. Don’t let the colour fool you, the nutrition profile of cauliflower is actually quite impressive. Cauliflower is vitamin rich – it contains some amount of almost every vitamin and mineral you need! That doesn’t mean you can survive off cauliflower alone though. Although, with it’s versatility you may never get bored of cauliflower! Roast it, make it into rice or pizza bases, blend it into soup – the options are (almost) endless.
Cauliflower has a mild flavour, which makes it easy to disguise if you have fussy eaters. Freeze it raw and add to smoothies if you are looking for a way to get more veggies into your diet! It gives the same great texture as frozen banana but with less sugar. You won’t even taste it – trust us.
We love cauliflower! Pictured here just out of the oven - roasted for our Curried Cauliflower Salad. We also use it in our Satay Salad along with broccoli. If you haven't tried either of these salads yet you definitely should!
